Dinner Tonight


I worked a very long physical day today.

When I got home, I was ravished with hunger.
Lucky for me there was
one fresh chicken breast in the refrigerator and a
summer garden to pick my vegetables and herbs from.

I pounded the chicken flat and
poured olive oil on it and
a mixture of dried herbs, rubbed it with minced garlic,
then panned sheared it on a med heat.

Chopped tomatoes and blanched a zucchini,
Sprinkled the veggies with fresh chopped herbs.

You could call it: Chicken Marsala,
but it doesn't have the mushrooms or the wine.

I think I will call it:
Chicken Courgette with Solanum lycopersicum

Now go figure that one out!
